1 doz hard boiled eggs, cut in half lengthwise
1 small onion
1 tbsp Dijon mustard
½ tbsp. vinegar
Dash of curry powder
1 – 2 tbsp mayonnaise. Add more if needed.
Salt and pepper to taste.
Mash the egg yolks until crumbly. Mix all other ingredients except egg whites with the yolks in a bowl. Stuff the mixture into the egg white halves. Sprinkle with paprika or cayenne.
