2 tablespoons fresh lime juice
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper, to taste
1 ripe mango – peeled, seeded and sliced
1 ripe avocado – peeled, seeded and sliced
1/4 English cucumber, diced
3 green onions, sliced
2 tablespoons chopped fresh cilantro
In a small bowl, whisk together lime juice and olive oil. Season to taste with salt and pepper; set aside.
Arrange mango and avocado on a serving plate. Sprinkle with cucumber, green onions and cilantro. Drizzle with dressing; serve immediately.
